Nachos are an all time favorite for most kids no matter what the
age. But how can that be a healthy choice? It all depends on what
you choose to put on them!

When cooking ground pork, beef, or chicken to add to the topping
you can add some vegetables that will essentially disappear.
Eggplant or zucchini when cut small, will all but dissolve when
cooked as long as ground meat should be cooked. Add it when you
first start the cooking and as it breaks down you will be able to
incorporate it into the meat so that you will not even notice it!

Shredded carrots can be added to the cheese mixture and (when you
use yellow cheddar) will blend almost seamlessly with the cheese
when it melts.

If you have the time, chips are not the only choice you have for
creating this dinner treat... You can purchase pita breads and make
your own "chips". Simply cut the pitas as you would a pizza, into
wedges, dust them lightly with olive oil, a sprinkling of salt, and
maybe some garlic powder, and bake them at 400 degrees until they
are toasty brown (about 10 - 15 minutes). If you don't have the time,
nachos are not a terrible choice, and rather a nice treat for every once
in a while!


Tips:

When choosing condiments for your nachos the choices can be as
easy as they are healthy.

Guacamole can be put together very easily using a ripe avocado, a
tablespoon of mayonnaise, a squirt of lemon juice and some salt and
pepper.

Chop some fresh tomatoes, add onion, cilantro, and lime juice and
(if you are brave enough) hot peppers, and you have yourself
homemade salsa!

If you are concerned about calories, 1% sour cream can be
purchased at most grocery stores.
