Summer can bring a fantastic selection of vegetables and fruit, but
sometimes we get stuck in a rut when it comes to preparing these
gifts from nature.
Here are some ideas that might make your veggies and fruit seem a
little less ordinary!

Veggie Sandwiches

If you love vegetables this is perfect for lunch or a light dinner. The
combinations are nearly endless, but here is a suggestion to get you
started:
     two slices of bread
             (whole grain bread works best, toasted if you like )
     2 slices of zucchini
     2 slices of tomato
     2 large spinach leaves (or a bunch of baby spinach)
     1 slice of onion
     2 slices of carrot
     1 slice of red pepper
             (1/4 of the pepper - or 1/2 if it is a small pepper)
     Mayonnaise, mustard, pickles or whatever you prefer
Layer the ingredients onto the bread and voilà!

Tips:
When slicing the carrots and zucchini you should stand them up on
end and slice fairly thin pieces so that they lay flat (like a pickle slice
would).
Go crazy! Avocados make fantastic additions to veggie sandwiches,
as do broccoli, asparagus, swiss chard...You can add some cooked
vegetables and some raw vegetables, add cheese... Be creative!


BBQ Veggies

When preparing your meat for the BBQ, why not throw the veggies
on the grill as well? You don't have to have a fancy BBQ with a side
burner (though these do come in handy!), nearly everything can be
put right into the BBQ!

Carrots are fantastic! Slice them into sticks, add a little salt & pepper
and wrap them in tin foil. They cook in about as much time as it
takes to fully cook your meat. If you have a top rack you can put the
up there, if you don't, just remember to turn the package of carrots
over every so often so that one side does not over cook.

Asparagus, broccoli, mushrooms, all do very well wrapped in tin foil
with a little salt, pepper & butter (and even a touch of lemon juice if
you feel a little zesty!).

Eggplant, zucchini, anise (sometimes called fennel root), apples,
peppers all cook very well right on the grill!
Apples and anise seasoned with thyme and a little salt make a
fantastic side to pork or chicken!
Peppers, zucchini and eggplant grill wonderfully if sliced thick and
seasoned with a little salt and pepper. Just remember to leave them
over low heat, or up on the top rack if possible. You will want to add
these when your meat is about half way done, they do cook more
quickly than most meat.
